The History of Miso@- Basic Facts of Miso -
Miso is an essential element of Japanese dietary habits. Its history dates back to the Asuka period (6th century), and is believed to have originated in China. For more than 1200 years, miso has been a fundamental part of the Japanese diet.

At first it was a prized extravagance of Buddhist temples and the noble class, but in the Muromachi period (1333-1573) it became available to the merchant class, which led to homemade production, and by the dawn of the Edo period (1603-1868) commercial production was firmly established. Ever since, all over Japan in various regions, all sorts of colors and ghometown tastesh started to be produced. Of course, due to the difference in ingredients, and also from the natural environment and preferred tastes of a region, a huge variety in the taste of miso came into existence.
