CHICKEN MISO MASCARPONE (chicken cheese miso stew)
Mascarpone / 300 grams
Kaga miso / 40 grams
olive oil / 30 ml
chicken breasts / 2 pieces
salt, pepper / to taste

fresh shiitake mushrooms / 4
mushrooms / 4
bell pepper green / 1/2
bell pepper red / 1/2

1. mix together Mascarpone and miso in a bowl; set aside.
2. cut chicken into bite-size pieces and sprinkle with salt and pepper.
3. quarter shiitake and mushrooms. cut peppers to approx 1.5 cm squares .
4. heat olive oil in a pan; saute chicken until it turns white; add peppers and mushrooms, stir fry lightly, then add Mascarpone and miso mixture.
5. let simmer until chicken is fully cooked.
